Travel in taste...
Acclaimed chocolate maker Joel Durand is probably one
of my favourite treat.
Joel established his shop nearly 20 years ago and has
since then confirmed that he was one of the best.
He offers a unique selection of 30 different ganache
chocolate with subtle tastes such as thyme, rosemary, lavender, seshuan pepper,
caramel with salted butter (he is originally from Brittany), and my preferred one,
Violette.
His workshop is located just a few step from his shop
and all is done by hand as I can prove it with the following pictures…

Once the ganache has been prepared,
the chocolates are
cut with this machine into squares
Next the chocolate are to be brought
to the covering machine

Then the letter are applied on the chocolate
Before spending 15-20 minute
in the cooling tunnel
Et voila....
